- 14 oz fava beans (fresh with pod – 3.5 oz shelled)
- 1 clove garlic (without the germ)
- 5 leaves basil (or fresh mint)
- 1 oz pecorino cheese
- 0.7 oz parmesan cheese
- 1/3 cup extra virgin olive oil
- 1.5 oz walnuts (or pine nuts, almonds, or hazelnuts)

Steps
First, open the pods and extract the fava beans. If the beans are large, you can blanch them for a minute in boiling salted water and then cool them in cold water to remove the outer skin more easily.
In a mixer or blender, put the fava beans, pecorino, parmesan, walnuts (or pine nuts, almonds ..), garlic (without the germ), basil (or mint), and salt. Start blending while gradually adding extra virgin olive oil until you obtain a homogeneous cream.
