I swear, with this fantastic sauce that is always left when I prepare stockfish stew, here is the fantastic recipe from my mom, who never missed an opportunity to cook it for me whenever I came home to Sicily from Rome. I have already prepared paccheri with stockfish, a fish sauce specifically prepared for this pasta, but paccheri with stockfish sauce are nothing more than pasta dressed with what remains of the stockfish stew, a typical recipe from Southern Italy, Sicily, Calabria, and Campania.   • This pasta is just a backup first course. If you happen to cook stockfish stew and when the potatoes and stockfish are gone, you always have a little sauce left with olives and some pieces of potatoes and stockfish. Try dressing the pasta in this sauce, you will need very little! With 300 grams of sauce and 300 grams of paccheri, you prepare a super tasty first course for the whole family.

  • Cook the paccheri until they are still al dente.

  • Toss the paccheri with the stockfish sauce, a small ladleful of water, a drizzle of extra virgin olive oil, and a sprinkle of chopped parsley.
