Today I’m sharing this recipe for delicious zucchini and tuna burgers in the air fryer, an easy, light, and tasty preparation. I cooked them in the air fryer, but you can use the oven or a non-stick skillet on the stovetop. This is a fun way to get kids to eat vegetables and fish. - 2 zucchini (large)
- 5.5 oz tuna in oil
- 1/2 cup grated Parmesan
- 1.75 oz scamorza cheese
- 1/4 cup milk
- 1 egg
- 1 cup breadcrumbs
- salt
Steps for Zucchini and Tuna Burgers in Air Fryer
As mentioned above, these burgers can be cooked in various ways. If you choose to use the oven, preheat it to 356°F, while if you prefer to cook them in a skillet, use a non-stick pan and grease it with some extra virgin olive oil. In this recipe, I used the air fryer.
Start by washing the zucchini and, with a suitable grater (the one with large holes), grate them into a bowl.
Then salt them, stir with a fork, and let them rest for 10 minutes. After that time, you will see they have released water, so put them in a tea towel or cotton cloth and squeeze them very well.
Now drain the tuna and add it to the zucchini. Add the egg, milk, grated cheeses, 2 tablespoons of breadcrumbs, a pinch of salt, and mix everything very well.
With the mixture, form the burgers, coat them in the remaining breadcrumbs, and place them in the air fryer. Drizzle some extra virgin olive oil on top. If you have spray oil, it’s even better.
Cook at 356°F for 10 minutes, then flip the burgers and continue cooking for another 5/6 minutes.
