Ingredients

  • 4 eggs (large)
  • 150 g radicchio (net of waste)
  • 55 g provola
  • extra virgin olive oil
  • salt
  • pepper
  • 1 tablespoon cornstarch (optional)

Preparation

  • After cleaning and washing it, cut the radicchio into strips.

    Put it in a pan with a drizzle of oil and a pinch of salt, let it wilt over medium heat for a few minutes (1). Then turn off and let cool.

  • Break the eggs into a bowl, add salt, pepper, and a scant tablespoon of cornstarch, if desired.

    Beat well with a whisk.

  • Add the radicchio and the provola, cut into cubes (2). Mix to distribute the ingredients.

  • Take a cake pan, line it with parchment paper, and pour in the mixture (2). Proceed with cooking in the oven, in air fryer or pan, as described below.

  • For oven baking

    Put the pan in a ventilated oven at 356°F and bake the frittata for about 20-25 minutes, depending on the thickness.

    For air fryer cooking

    Put the pan in the basket and cook at 356°F for 12-13 minutes, then open, turn the frittata to the other side (use a plate to help you) and cook for another 2 minutes, so that it is golden on top and bottom.

    For pan cooking

    Do not put the mixture in the cake pan, but pour it directly into a pan greased with oil or butter (the pan used for the radicchio is fine). Cook for a few minutes on both sides, until the surface is golden.

  • Your radicchio frittata is ready, serve it cut into wedges as a second course.

Tips and Variations

You can use late or early Treviso radicchio, Chioggia or Verona radicchio, to your taste.

The addition of cornstarch is optional, you can omit it or replace it with potato starch or rice flour.

You can add a tablespoon of grated Parmesan cheese, or herbs to taste.

You can enrich the frittata with cubes of speck, cooked ham, or bacon.
