Valentine’s Day Cookies

This year I’ve decided to make Valentine’s Day cookies to sweeten this lovely day.

Usually, there aren’t big celebrations at my house, my daughters make something nice for their boyfriends, but I typically don’t celebrate this holiday with my partner. We prefer to celebrate every day of the year rather than one day decided by the calendar. But we don’t argue about Valentine’s Day because a sweet thought is always nice to prepare, even just for friends or colleagues.

These little cookies are really easy to make, and you can also fill them with other types of jam. For Valentine’s Day, the red color of berry jam is ideal. I also love raspberry jam, which is perfect for this recipe.

Ingredients for Valentine’s Day Cookies

  • 2 cups all-purpose flour
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1 egg
  • 1/2 packet baking powder
  • to taste berry jam

Preparation of Valentine’s Day Cookies

  • Pour all the ingredients except the eggs into a large bowl. Knead with your fingertips to form a sandy mixture. This way, the butter will mix with the flour, and the shortcrust pastry will be more compact.

    You can safely use the stand mixer with the paddle attachment.

  • Add the egg and knead quickly to form a smooth and uniform dough.
    Wrap the dough in plastic wrap and place it in the refrigerator for at least half an hour.

  • Take the shortcrust pastry out and roll it between two sheets of parchment paper to a thickness of about 1/5 inch.

    Use a heart-shaped cookie cutter to cut out the hearts. Place them on a baking sheet lined with parchment paper as you go.

    With the handle of a teaspoon or a knife with a rounded tip, press to form the cavity where you will put the berry jam.

  • Bake in a preheated oven at 340°F for about 12 minutes, the cookies should not brown too much. Let them cool completely before serving.

    Valentine’s Day cookies can be stored for several days in an airtight container.
