Cooking roasted tomatoes in an air fryer is a practical and quick way to prepare a tasty summer side dish. A simple recipe that immediately calls for a good slice of bread to mop up the sauce!
During summer, tomatoes are at their peak sweetness and juiciness: perfect to enjoy raw in salads, but also ideal cooked and flavored with herbs.
To prepare roasted tomatoes, you can use a traditional oven, cook them in a skillet, or — as I show in this recipe — cook them in an air fryer, an excellent alternative method for vegetables (eggplants, peppers, fennel…). In just a few minutes, you’ll get perfectly roasted tomatoes, slightly caramelized on the surface, without turning on the oven and without suffering from the heat at the stove.
Roasted air fryer tomatoes are excellent served at room temperature and are open to many variations. I’ve flavored them with mint, oregano, and basil, but you can also add parsley, marjoram, thyme, or a clove of minced garlic for a bolder touch.

- 1 dash extra virgin olive oil
- 1 pinch dried oregano

How to Cook Roasted Tomatoes in the Air Fryer
To prepare roasted tomatoes in an air fryer, start by washing and drying the tomatoes, then cut them in half (1). Season them with a good pinch of salt, a little oregano, and some mint (2). I prefer to add fresh basil raw at the end of cooking to prevent it from burning and altering its flavor.
Line the basket of the air fryer with parchment paper, then arrange the tomatoes cut side up. Drizzle them with extra virgin olive oil (3). If you have an oil sprayer, you can use it to evenly season the tomatoes using less oil.
Cook the tomatoes in the air fryer at 356°F for about 20 minutes, without turning them halfway through. When they are soft and slightly caramelized on the surface (4), they are ready. Remove them from the air fryer and transfer them to a plate, then garnish with chopped fresh basil (5).
Let the roasted tomatoes cool completely before serving. They make an excellent side dish for meat or fish entrees, but they can also be a tasty cold appetizer.
Storage
You can store roasted tomatoes in the refrigerator for 2 or 3 days.
Tips and Variations
Since the air fryer tends to scorch more delicate herbs, it’s better to add fresh herbs like basil at the end of cooking.
If you want to add garlic for more flavor, I recommend using 3 or 4 cloves: peel them, split them in half, and remove the core. Cut them into large pieces and place one or two on each tomato, so they are easy to spot and remove after cooking.
