No-Bake Yogurt Cake

The no-bake yogurt cake is a fresh and light dessert, perfect for hot days or as a sweet finale after a meal.

Its preparation does not require the use of the oven, making it ideal for those who want a quick dessert and easy to make. With a crunchy base of Digestive biscuits and a soft yogurt cream enriched with fresh strawberries, this cake is a true delight for the eyes and the palate.

To prepare it, I used plain yogurt but you can customize it with fruit yogurt according to your tastes.

Ingredients

  • 10.5 oz Digestive biscuits
  • 5.3 oz butter
  • 1.25 cups whipping cream
  • 2 tbsp powdered sugar
  • 1.25 cups yogurt
  • 2 sheets gelatin
  • 1 small glass milk
  • to taste strawberries

  • Blender
  • Baking Pan
  • Whisks

Steps

  • Let’s prepare the base

  • Line a 20 cm springform pan with parchment paper. For convenience, I always use baking spray.

  • Finely grind the Digestive biscuits until they have a sand-like consistency.

    Melt the butter, add it to the biscuits, and mix until you obtain a homogeneous dough.

    Pour the mixture into the pan, compact it with the back of a spoon, and then put it in the fridge to rest.

  • Let’s prepare the yogurt cream.

  • Soak the gelatin sheets in a bowl with cold water.

  • Meanwhile, whip the cream with the powdered sugar. Add the yogurt and mix.

    Pour the squeezed gelatin into the warmed milk and dissolve well with a whisk.

    Add to the yogurt cream and combine.

  • Remove the biscuit base from the fridge and pour the yogurt cream on top.

    Level with a spatula or a spoon, cover with plastic wrap and put in the fridge to rest for at least 4/6 hours.

  • After this time, unmold and decorate with fresh strawberries or fresh fruit of your choice.

    Enjoy your dessert.

Storage and advice …

Keep in the fridge and consume within 2/3 days

You can replace plain yogurt with fruit yogurt.
