These soft flatbreads are incredibly delicious. Tall and fluffy like a cloud, they are perfect for stuffing with whatever you like, from cold cuts to cheeses, and even vegetables. You can create many flavor combinations, and of course, they are also delicious on their own. They can be the perfect snack or a tasty treat for aperitifs and pre-dinner drinks! Additionally, you can freeze these soft flatbreads once they are cool to always have a supply ready in the fridge!

Ingredients for Soft Flatbreads

  • 2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 3/4 cup water (at room temperature)
  • 3 tbsps extra virgin olive oil
  • 1 tsp salt
  • 1.5 tsps active dry yeast
  • 1 pinch sugar
  • to taste extra virgin olive oil
  • to taste salt
  • to taste rosemary (fresh or dried)

Steps to Prepare Soft Flatbreads

  • In the glass bowl, add the two types of flour and salt, quickly mix with your hand, then add sugar and yeast, and quickly mix again.

  • Add the water and oil to the bowl. Put on the gloves and start kneading with your hands. When it becomes less sticky, transfer the dough onto a floured pastry board and work it until smooth (this takes a few minutes). Shape it into a ball, place it in the bowl, and cover with plastic wrap. Let it rise for 2 hours.

  • After 2 hours, the dough will have more than doubled in size. Pour it onto the pastry board and divide it into 8 equal parts (use a scale to ensure each part weighs 75g).

  • Place the balls on a baking sheet lined with parchment paper, cover again with plastic wrap, and let them relax for 30 minutes. Then gently flatten the flatbreads with your fingers to give them a round shape, cover again with plastic wrap, and let them rise until doubled.

  • Once the flatbreads have doubled in size, preheat the oven to 430°F. Meanwhile, season the flatbreads: make some holes on the surface with your fingers, season with salt and rosemary, and add a generous drizzle of oil on top.

  • At this point, bake the flatbreads for 20 minutes. Then remove them from the oven, let them cool slightly, and enjoy them plain or stuffed!

TIPS

If you want to freeze them, do so once they’re cool. Wrap them in parchment paper, place them in a freezer bag, and freeze. To enjoy them later, you can take them out the night before and lightly warm them before eating.
