The mini pizzas we propose today are made with puff pastry, which is easily found in all supermarkets.

We went with the classic tomato and mozzarella mini pizzas… But if you prefer, you can also top the puff pastry mini pizzas with diced cooked ham, substitute the mozzarella with provola cheese cubes, or replace anchovies with tuna pieces.

Basically, you can top them with whatever you like.

  • 1 puff pastry (gluten-free)
  • to taste tomato sauce
  • 7 oz mozzarella
  • to taste oregano (optional)
  • salt
  • extra virgin olive oil

Steps

Gluten-Free Puff Pastry Mini Pizzas

  • Roll out the puff pastry and cut it into small round or oval shapes.
    (If you don’t have a round cutter, use a glass).

  • Poke the center of the puff pastry discs with a fork, without reaching the edges

  • Place the mini pizza bases on the grill of the basket, without overlapping them.

  • Mix the tomato sauce with salt, pepper, oregano, and a drizzle of extra virgin olive oil.

    Spread a tablespoon of the mixture on each mini pizza, spreading it evenly without reaching the edge.

  • Cook in the air fryer at 392 °F (200 °C) for 6/7 minutes.

    (Then bake the mini pizzas in a preheated ventilated oven at 392 °F (200 °C) in static mode for 10/12 minutes).

    Halfway through cooking, place the mozzarella cubes on each mini pizza and continue cooking until they are crispy.
