Ingredients
For the filling
- 3 tablespoons sugar
- 3.5 oz ricotta
- 1.5 oz chocolate chips
- 3 oz grated coconut (shredded)
- 1 tablespoon anise liqueur (or milk)
- 2 eggs
- 4.5 oz sugar
- 3.5 oz water
- 2 oz sunflower oil
- 1 tablespoon Nutella®
- 1 3/4 cups all-purpose flour
- Half packet baking powder

- 1 Spoon
- 1 Hand whisk
- 1 Baking cup
How to Prepare Muffins with Coconut Heart
First, prepare the filling. In a bowl, add the sugar, ricotta, chocolate chips, grated coconut, and the liqueur (or milk). Mix with a spoon until you get a homogeneous mixture. The mixture should be moldable and not sticky.
With your hands, form medium-sized balls. With this amount, you should get 10/12 balls. Once ready, let them rest in the refrigerator while you prepare the muffins.
For the muffins, add the eggs and sugar in a bowl. Mix with a whisk.
Add the water and oil. Mix with the whisk.
Add the Nutella and mix everything well.
Finally, add the flour and baking powder. Mix with the whisk, taking care not to create lumps.
Insert a paper baking cup inside an aluminum muffin mold. I used these molds.
Pour about a tablespoon of batter into the baking cups. (I made 10).
Take the coconut balls from the fridge and insert one into each muffin.
Cover the ball with a bit of batter and bake in a hot, static oven at 350°F. Let it cook for about 20/30 minutes. Please check the cooking times based on your oven.
Remove from oven, let cool slightly, and if you like, sprinkle with powdered sugar.
