Ingredients

  • 2 large peaches
  • 2 tsp rum
  • 3 tbsp sugar
  • 4 star anise
  • 1 cup Greek yogurt
  • to taste sliced almonds

Preparation

Carefully wash the peaches, dry them, and cut them in half. Remove the pit and place them in two single-serving baking dishes or one larger baking dish.

Pour the rum evenly over the peaches, add the sugar, preferably brown, and pieces of star anise. Bake in a pre-heated oven at 392°F and let cook for about 10 minutes, or until the peaches are well wilted.

Once the time has passed, let the peaches cool, placing them in the fridge for at least an hour after they have cooled down. At this point, work the yogurt cream with spoons to form quenelles (if this is difficult, serve it in dollops). After placing them on the peaches, sprinkle with sliced almonds and fresh mint leaves.

Tips and Storage

Baked peaches keep for a few days in the fridge, but not assembled because both the yogurt and peaches would release water, ruining everything.
