Ingredients for preparing the omelet with creamy potatoes
- 6 eggs
- 10.5 oz potatoes
- 3.5 oz Asiago cheese
- as needed extra virgin olive oil
- as needed salt and pepper
- 0.7 oz grated cheese
- 1 tbsp chopped chives
- Half lemon zest

Steps
Peel the potatoes and after washing them, cut them into chunks. Boil them; in a pressure cooker, it only takes a few minutes. Season with salt, pepper, a couple of tablespoons of extra virgin olive oil, and some chives. Mash them with a fork. Add the cheese cubes and mix.
In a bowl, break the eggs. Season with salt, chopped chives, grated cheese. Quickly work with the fork.
Grease a pan and place it on the heat. Pour in the egg mixture, cover with a lid. When the frittata is almost cooked, put the potatoes with the cheese on half and fold the frittata in half. Cover with a lid and cook for a couple more minutes.
Storage
You can store it in the fridge for a couple of days.
