Green Spinach Bread

The preparation is very simple: we mix the flours, spinach puree, water, and yeast and begin to mix. Finally, we add the salt and knead until we get a homogeneous sticky dough that we let rise for an hour. We make folds every 20 minutes and let it rise for another hour or until the dough doubles its volume. Then we take the dough and divide it into two parts forming loaves. Let them rest for another half hour covered and then bake at 350°F for about 30 minutes.

Very few ingredients, a dough that is made in a short time and that rises in a few hours. You can, for example, prepare it in the morning to have it ready for lunch or early in the afternoon to enjoy it for dinner. All you need to do is get the spinach and prepare it as soon as possible!

Steps to prepare Green Spinach Bread

  • Prepare the spinach bread by first cooking the spinach: wash, drain, and place them in a large saucepan with the lid. Cook them without adding water or other seasonings until they are soft. Squeeze them well and blend them with an immersion mixer until reduced to a puree.
    Pour the two flours into a bowl and add the blended spinach, water, and crumbled yeast.

  • Mix first with a spatula and add the salt, then work the dough with your hands. In the end, you should get a soft and sticky dough.
    Place the dough in an oiled bowl and let it rise covered for an hour.

  • Make folds by bringing the dough from the outside to the inside and repeat this operation three times every 20 minutes.
    Overall, the dough should rise for about two hours or until it doubles in volume.

    Dust them with flour and score them with a knife on the surface. Let them rest covered for at least half an hour.

You can use only all-purpose flour.

With this dough, you can make one large loaf or smaller loaves or rolls.

You can also bake the bread using a cast iron pot as we indicated in the no-knead bread. In this case, you will need to first heat the pot in the oven and pour the bread dough into the hot container.
