Ingredients

  • 10.5 oz cantaloupe melon
  • 5.3 oz mascarpone
  • 0.4 cup whipping vegetable cream
  • 2.8 oz sugar
  • 1 teaspoon lemon juice
  • 3.5 oz cookies (glazed puff pastries)

Steps

  • Cut the melon into small cubes and place it in a bowl. Add lemon juice to keep the color fresh and for a touch of acidity.

  • In a bowl, whip the cream until stiff peaks form. In another bowl, mix the mascarpone with sugar until smooth. Gently fold the whipped cream into the mascarpone, mixing from the bottom to the top to avoid deflating the mixture.

  • Blend the melon and add it to the cream, keep some cut into cubes.

  • In 4 glasses or bowls, place a layer of crumbled cookies, then a layer of mascarpone cream. Add some melon cubes and repeat until all ingredients are used.
