Air Fryer Roast Potatoes, a super classic of Italian cuisine and family meals. No lunch or dinner is complete without roast potatoes served on the table. I must confess they are my favorite side dish, especially when I prepare a meat-based main course.
In fact, with chicken or a nice juicy roast, they are the ideal side dish.
Since I got my air fryer, making them has become even easier; in half an hour, they are ready, beautifully golden as I like them.

Preparation of Air Fryer Roast Potatoes
Peel the potatoes and cut them into large wedges, then into pieces about an inch thick.
Transfer them to a bowl and season with extra virgin olive oil, Modenese aglione, and a pinch of salt. Mix thoroughly.
Place the potatoes in the air fryer basket with a parchment paper liner on the bottom. Although the fryer is non-stick, I always prefer to use the liner for easier cleaning after cooking.
Bake the potatoes at 400°F for 30 minutes. Turn them halfway through to ensure even cooking.
Serve immediately once ready.

What is Modenese aglione?
Modenese aglione, also known as Bolognese brine, is a mixture of spices, garlic, and fine salt used to season meat, vegetables, and fish. It’s very practical because it allows you to flavor dishes using less salt.
