Ingredients

  • 1.1 lbs melon
  • to taste extra virgin olive oil
  • to taste salt and pepper
  • to taste fresh mint
  • to taste Balsamic glaze

Tools

  • Peeler
  • Bowl

Preparation

  • Remove the seeds from the melon after cutting it in half and peel it with a sharp knife. Use a peeler to create thin slices, a sort of fruit carpaccio, and collect them in a bowl.

    Once done, gently squeeze the melon slices and let them drain in a colander for about half an hour, but in the refrigerator. After this time, squeeze again and place on a serving dish.

    At this point, season with extra virgin olive oil, salt, pepper, and fresh mint leaves, torn by hand.

    Mix all the ingredients well to ensure even flavoring. Cover the dish with plastic wrap and refrigerate for another 30 minutes.

    Serve our Melon and Fresh Mint Salad as a cold side dish or appetizer, garnished with more mint leaves and, if desired, a drizzle of balsamic vinegar.

    You can also substitute balsamic vinegar with lemon juice.

Tips and Storage:

The melon salad can be stored in the refrigerator for at least 1 day, although it will soften significantly. However, before eating it, it’s important to drain the water released by the fruit.

Don’t like melon? No problem, any other fruit with firm, sliceable flesh will work just fine.

To maintain the salad’s freshness, you can slice the melon, proceed with the draining steps, and keep it in the refrigerator ready to be dressed at the last moment.
