Potato Croquettes

Potato croquettes, the classic ones like those we prepare in the south, in Sicily, Calabria, Puglia, and of course Campania. This doesn’t mean they aren’t made in other parts of Italy. Everyone has their own version, I personally make them simple, and when I want to change, I add a cube of cheese in the heart of the croquette to make it gooey or mint leaves in the dough in the Sicilian style. I’ve had the chance to eat potato croquettes in Naples in the ‘cuoppo’, a cone of straw paper, never alone, always accompanied by other fried items like pasta, ‘sciurilli’ (zucchini flowers), ‘scagliozzi’ (slices of polenta) which are obviously prepared as street food and are good to eat anytime.   • 13.4 oz white potatoes
  • 1 oz breadcrumbs
  • 0.7 oz grated Parmesan
  • 1 egg
  • 1 tsp salt
  • 1 pinch pepper
  • 0.7 oz flour
  • 4 sprigs parsley

Steps for preparing croquettes

Potato croquettes

  • Boil the potatoes and mash them, I used the food mill but a potato masher works just fine.

  • Season the potatoes with the egg, parsley, salt, breadcrumbs, and pepper. Mix everything and form a cord, cut into sticks and pass them in flour, egg, and breadcrumbs.

  • Heat the oil to 338°F and fry the potato croquettes. Salt and serve while still hot. Ready.
