Ingredients for Eggplants in Puff Pastry
- 1 roll puff pastry (rectangular)
- 1 1/4 cups cherry tomatoes
- 2 2/3 cups eggplants
- 1 cup mozzarella
- to taste extra virgin olive oil
- 1 tablespoon oregano
- 1 sprig basil
- to taste salt
How to Prepare Puff Pastry Bites with Eggplants
Wash the eggplants. Remove the stem, and without peeling them, cut them into thin slices.
Grill the eggplant slices on a hot grill. Wash the cherry tomatoes and slice them. Also, cut the mozzarella into small cubes.
Lay a rectangular roll of puff pastry on the work surface and divide it into rectangles. I got 12 rectangles.
Place 2 slices of grilled eggplant, some mozzarella cubes, and cherry tomato slices in the center of each rectangle.
Add a pinch of salt and a pinch of oregano.
Drizzle with a bit of extra virgin olive oil. Place the Puff Pastry Bites side by side on a baking tray lined with parchment paper and bake in a static oven at 374°F for 18-20 minutes. Decorate with fresh basil leaves.
