Soft and Moist Yogurt Cake

The soft and moist yogurt cake is perfect for breakfasts and snacks in the name of simplicity, you can also use it as a base for filled cakes and since it is already moist it doesn’t need much soaking! Few simple and healthy ingredients and you will get a fabulous dessert! I recommend it plain or layered with cream and fresh fruit! But now enough talk and let’s get into the kitchen to prepare this very easy cake!

Ingredients for the soft and moist yogurt cake

  • 2 eggs (medium)
  • 1 1/2 cups plain yogurt (lactose-free)
  • 2 1/3 cups all-purpose flour
  • 6 1/2 tbsps cornstarch
  • 3/4 cup sugar
  • 1/2 packet baking powder
  • 1/4 cup extra virgin olive oil
  • as needed powdered sugar (for decoration)

Let’s Make the Soft Yogurt Cake!

  • In the stand mixer bowl, pour the eggs, sugar, and oil, mix using the whisk attachment at speed 4 until you get a frothy mixture, then add the yogurt and mix well with the rest of the ingredients by setting the mixer at speed 2 for 2 minutes.

  • Separately, mix the flour, cornstarch, and baking powder, and after mixing the powders, add them to the bowl with the more liquid mixture, always working with the whisk attachment at speed 4 for 5 minutes until you get a smooth and not too dense batter.

  • Preheat the electric oven to 350°F (180°C), grease and flour the pan, pour the batter into it, and level it slightly on the surface.

  • Once the oven is hot, bake the yogurt cake and cook for 1 hour, if you see that the cake is coloring too much on the surface, cover it with a piece of parchment paper for about 20 minutes and then remove it. Towards the end of cooking, do the toothpick test (this is necessary because ovens are not all the same) if it comes out dry the cake is ready!

  • Once the cake is well cooked, take it out of the oven but DO NOT remove it immediately from the pan because it would break when hot, wait for it to cool completely (it will take at least 3 hours), place it on a serving plate, sprinkle with powdered sugar as desired and serve! Enjoy your meal!

Variations

The yogurt cake as per recipe is simple and without flavors because it is perfect to be filled with whatever you want, but if you like a more aromatic base you can add to the dough either 1 vial of aroma (orange or lemon) or the grated zest of 1 orange or 1 lemon or 1 lime (with edible peel).

You can replace the classic yogurt with Greek yogurt.

You can add chocolate chips to the batter.

You can also add fresh fruit pieces to the batter (I recommend pears or apples or mango or peach).

You can replace the cornstarch with potato starch in equal quantities.
