The soft and moist yogurt cake is perfect for breakfasts and snacks in the name of simplicity, you can also use it as a base for filled cakes and since it is already moist, it does not need much soaking! With just a few simple and healthy ingredients, you will get a fabulous dessert! I recommend it as is, or layered with cream and fresh fruit! Ingredients for the soft and moist yogurt cake
- 2 eggs (medium)
- 1 1/2 cups plain natural yogurt (lactose-free)
- 2 1/4 cups all-purpose flour
- 1/3 cup cornstarch
- 3/4 cup sugar
- 1/2 packet baking powder
- 1/4 cup extra virgin olive oil
- to taste powdered sugar (for decoration)

Let’s prepare the soft yogurt cake!
In the stand mixer bowl, pour the eggs, sugar, and oil, mix using the whisk attachment at speed 4 until you get a foamy mixture, then add the yogurt and mix it well with the other ingredients, setting the mixer to speed 2 for 2 minutes.
Separately, mix flour, cornstarch, and baking powder and after mixing the powders, add them to the bowl with the more liquid mixture, work always with the whisk attachment at speed 4 for 5 minutes until you get a lump-free and not too dense batter.
Preheat the electric oven to 350°F, grease and flour the pan, pour the batter into it, and level the surface slightly.
Once the oven is hot, bake the yogurt cake and cook for 1 hour, if you see that the cake gets too colored on the surface, cover it with a piece of parchment paper for about 20 minutes then remove it. Towards the end of cooking, do the toothpick test (this is necessary because ovens are not all the same) if it comes out dry the cake is ready!
Once the cake is well cooked, remove it from the oven but DO NOT remove it from the pan immediately because it would break while hot, wait for it to cool completely (it will take at least 3 hours), place it on a serving plate, sprinkle with plenty of powdered sugar and serve! Enjoy your meal!
Variations
The yogurt cake as per the recipe is simple and without flavors as it is perfect to be filled with anything you want, but if you like a more aromatic base you can add to the batter either 1 vial of flavor (orange or lemon) or the grated peel of 1 orange or 1 lemon or 1 lime (with edible peel).
You can substitute regular yogurt with Greek yogurt.
You can add chocolate chips to the batter.
You can also add fresh fruit pieces to the batter (I recommend pears, apples, mango, or peach).
You can substitute cornstarch with potato starch in equal quantity.
