Ricotta and Pomegranate Balls

The Ricotta and Pomegranate Balls are a quick idea (apart from the fridge resting time) to present a colorful and appetizing appetizer for the fall-winter period when the fruit is harvested.

I used ricotta mixed with Grana cheese but we could use Robiola and even Mascarpone, or even better, a mix of these foods!

If you don’t like pomegranate you can coat the cheese balls with crushed nuts, hazelnuts, or pistachios are ideal!

P.S. IT’S BETTER TO USE THE DRIEST RICOTTA POSSIBLE!

INGREDIENTS

  • 2 cups ricotta (or Robiola or a mix of them)
  • 2.1 oz Grated Grana Padano
  • 3 pinches salt
  • 1 pinch pepper
  • 1 pomegranate

FOR PREPARING THE RICOTTA AND POMEGRANATE BALLS RECIPE

  • observing the ricotta, if it’s too watery, I let it drain for an hour in a fine-mesh strainer.
    After the resting time, place the ricotta in a bowl and work it with a fork or a soft spatula to make it smooth and well homogeneous.

    Combine the grated Grana cheese then season with salt and pepper.

  • Mix very well and form many little balls or truffles that I then leave in the refrigerator to firm up.

    Meanwhile, with a nice pair of gloves, I extract the seeds, the pomegranate arils, and leave them on paper towels, to have them less moist so they stick better to the mixed cheese balls.

    Once the ricotta truffles are firm, I cover them with pomegranate arils leaving them in the refrigerator before serving them at the table!
