What is needed to prepare the Zucchini and Feta Skewers
- 2 zucchini
- 8.8 oz feta
- 1 clove garlic (optional)
- 4 sprigs mint
- 4 tbsps extra virgin olive oil
- Half lemon (juice and zest)
- 2 pinches black pepper (ground)

Steps for Zucchini and Feta Skewers in a Pan
To prepare the zucchini and feta rolls, first finely chop the mint after washing it.
Crush the garlic, extract the lemon zest and juice.
In a bowl, mix mint, garlic, lemon zest and juice, ground black pepper, and extra virgin olive oil.
Cut the feta into 6 parts and then each part into 4 small squares.
Let the feta marinate in the oil with the dressing for 15 minutes.
Meanwhile, use a mandoline and slice the zucchini into thin slices after trimming them.
Place a cube of feta on each zucchini slice and roll them tightly.
As you roll them, skewer them onto bamboo skewers, you can skewer 4 or 5 rolls on each skewer.
Heat a high-sided pan with a 11-inch diameter well with a drizzle of extra virgin olive oil.
When it gets nice and hot, arrange 3 or 4 skewers and grill them on one side, then turn them over to brown them on the other side.
It will take roughly 6/7 minutes in total.
Serve them drizzled with the remaining marinade and some mint leaves.
Storage, tips, and variations
You can store them in the refrigerator tightly sealed in an airtight container for 2 days.
I advise not to add salt to the marinade because the feta is already very salty on its own.
If you don’t like it, you can omit the garlic.
