Ingredients

  • 5.6 oz pasta
  • 7.8 oz pumpkin (net of waste)
  • 3.5 oz feta
  • extra virgin olive oil
  • salt
  • pepper
  • sage (to taste)

Preparation

  • After removing the skin and seeds, cut the pumpkin into cubes. Season it with extra virgin olive oil, salt, and pepper, then place it in a baking dish.

  • Place the feta in the center, with a drizzle of oil on top (1).

    Put the dish in the oven at 392°F and cook for about 20 minutes, or until the pumpkin is tender.

  • Meanwhile, boil the pasta in salted boiling water for the indicated minutes.

    Remove the baking dish from the oven and mash the feta and pumpkin with a fork (2).

  • Drain the pasta and pour it into the baking dish (3). Mix everything well, adding some cooking water to make the sauce creamier.

  • If desired, add a couple of sage leaves for fragrance.
