The soft coconut bundt cake is very simple to prepare. A healthy and genuine cake that will win you over at the first bite.

For the preparation, I used coconut yogurt, and if it looks a bit dark, it’s because I used brown sugar. If you don’t have it, you can use classic sugar.

Ingredients

  • 3 eggs
  • 9 oz sugar
  • 1 cup yogurt (coconut)
  • 1/3 cup sunflower oil
  • 2 cups all-purpose flour
  • 1 packet baking powder
  • 1/3 cup chocolate (shavings)

Tools

  • 1 Bowl
  • 1 Mixer
  • 1 Bundt pan
  • 1 Spatula

How to prepare the soft coconut bundt cake

  • In a bowl, add the eggs and sugar. Mix with an electric mixer until you get a fluffy and foamy mixture.

  • Add the yogurt and oil. Mix with the electric mixer.

  • Add the flour and baking powder. Mix well, being careful not to create lumps.

  • Add the chocolate shavings or chocolate chips and mix with a spatula.

  • Pour the mixture into a 9.5-inch bundt pan previously greased and floured. My pan doesn’t need to be greased or floured. If you want to take a look, you can find it here.

  • Bake in a preheated, static oven at 350°F for about 30/35 minutes. Please check the baking times according to your oven.

  • Remove from the oven, let it cool slightly, and if you like, sprinkle with powdered sugar.

  • Serve yourself.
