Ingredients
One sheet of phyllo dough → 4 prawns → 4 rolls.
- 8 prawns
- 2 sheets phyllo dough
- 1 cup water
- 1 drizzle extra virgin olive oil
- 1 pinch mixed peppercorns (with grinder)
- 1 pinch salt

Preparation
Clean the prawns
Gently separate the heads from the bodies.
Do not discard the heads, you can use them as a base for a potential broth with prawn heads or prawn sauce.Shell the prawns.
First, you need to remove the black thread or intestine whose content is not toxic but can ruin our dishes:
• with a sharp knife, make an incision on the back of the bodies;
• remove the black thread or intestine using a toothpick.Wash the prawns thoroughly under running water then let them drain in a colander.
Blot the residual water with kitchen paper towels.

Separate one sheet at a time.Cut the sheet into 4 strips parallel to the short side.
Pour some water and a drizzle of extra virgin olive oil into a cup, grind the pepper and mix to form an emulsion.
Brush each strip with the emulsion; if you do not have a brush, use a spoon.
Sprinkle a pinch of salt on the surface.Line a baking tray* with a sheet of parchment paper.

Continue until all prawns are used.
Place the prawn rolls in phyllo dough on the baking tray.Briefly preheat the oven.
Bake at 356°F in a fan oven for 15-20 minutes, according to the desired level of browning.Plate.
