Ingredients for preparing Valentine’s Roll

  • 1 cup orange juice
  • 2 tbsp sugar
  • 2 tbsp rice flour
  • 1 egg
  • 4 eggs
  • 0.75 cup powdered sugar
  • 1 tbsp acacia honey
  • 0.33 cup rice flour
  • 0.25 cup unsweetened cocoa powder

Steps to prepare the roll

I always prepare the orange cream first to give it time to cool well while I prepare the chocolate roll.

With a hand whisk, beat the egg with the sugar and rice flour. Make a juice with three oranges and add it little by little to avoid lumps. Five minutes and the cream is ready, let it cool before using it.

  • Start whisking the egg whites in the stand mixer, you can also use an electric whisk or by hand. Gradually add the sugar and honey. When the egg whites turn into snow, fold in the yolks one at a time. Sift the flour and cocoa together and with a spatula, from bottom to top, gently add them to the mixture. Place parchment paper on top of the baking tray and spread the roll mixture. Bake for 10 minutes at 375°F.

  • With the parchment paper on the work surface, turn over the cooked roll. Now that the orange cream is cold, lay it on the roll and spread it evenly with the spatula. Help yourself with the parchment paper to close the roll with the orange cream.
