Tasty chickpea and tuna patties, very quick to make, are perfect as a main dish or appetizer, along with pickled vegetables or sauces. They are prepared in minutes and can be baked in the oven (or fried in a pan if you prefer)… soft inside and crispy outside, they will be excellent on any occasion. Try them too, you just need a can of chickpeas, a can of tuna, an egg, and a bit of breadcrumbs!

Ingredients
- 1 1/2 cups canned chickpeas
- 2 oz tuna in oil (well-drained)
- 1 egg (medium)
- 1 clove garlic (to taste)
- parsley
- 1/3 cup breadcrumbs (+ 1 tablespoon for the surface)
- extra virgin olive oil
- salt
Tools
- Baking tray or pan
- Food processor
- Bowl
- Sieve
Preparation
Drain the chickpeas from their liquid, put them in a food processor along with a clove of garlic and a bunch of parsley.
Blend until you get a smooth puree. If necessary, you can add a little water to help you.
Drain the tuna from the oil, transfer it to a bowl and crumble it well with a fork.
Add the chickpea puree and the egg (1).
Season with salt, add the breadcrumbs, and mix the ingredients together. You should get a soft but moldable mixture (2). If not, add a pinch more breadcrumbs.
With the palms of your hands, form balls of uniform size and roll them in breadcrumbs.
Place them on a baking tray lined with parchment paper (3) and drizzle them with extra virgin olive oil on top.
Place the patties in a fan oven at 356-374°F and bake for about 20 minutes, or until golden brown.
The tuna and chickpea patties are ready to be served, excellent also as an appetizer, accompanied with mayonnaise or other sauces.
Tips and Notes
You can fry the patties in a pan with seed or olive oil, just a few minutes of cooking. Alternatively, you can put them in an air fryer.
You can use canned chickpeas or dried chickpeas, respecting the soaking and cooking times.
You can omit the garlic if you don’t like it, you can season with other herbs or spices as you wish.
