Ingredients
- 4 slices rye bread (or other type of bread)
- 2 pears
- 4 walnuts (shelled)
- 2.8 oz fresh cheese (stracchino, ricotta, or other of your choice)
- 1 tablespoon honey
- butter
- herbs (to taste)
- pepper

Preparation
Wash the pears, cut them in half, and remove the core. If possible, I recommend not peeling them.
Cut them into slices that are fairly thin.
Melt a small knob of butter in a pan, place the pears in it, and let them brown for a few minutes, turning them once or twice. They should remain intact and firm.
Take the pear slices out of the pan and transfer them to a plate. Add the honey to the cooking juices and let it melt over low heat.
In the meantime, lightly toast the bread on a grill or in the oven.
Place the bread on a tray, arrange on each slice the pears, the creamy cheese, the chopped walnuts, and a few leaves of thyme, mint, or other herbs to taste.
Finally, pour the honey liquid and add a pinch of ground pepper if desired. If you love honey, you can add more, raw.
The crostini with pears and walnuts are ready to be served!
Tips and Variations
Instead of fresh cheese, if you prefer stronger flavors, you can use a blue cheese like gorgonzola or brie. The cheese can be added in dollops or spread as a base.
You can use rye bread, whole grain bread, or homemade bread from your area.
You can toast the walnuts in a non-stick pan before adding them to the bread.
You can use the variety of pears you prefer, as long as they are not too ripe.
