Caprese Salad with Peaches

An appetizer, a side dish, or a main course, the Caprese Salad with Peaches is a perfect blend of summer colors and flavors, a small variation of the classic Caprese with tomatoes and mozzarella.

We added yellow peaches, perfectly ripe, sweet, and juicy to give an extra touch to a classic, always no-cook but if you prefer, you can grill the peaches already sliced for a few moments on each side to add a crisp note that I think fits perfectly.

Ingredients for Caprese Salad with Peaches

  • 3 buffalo mozzarella (125 g each)
  • 2 oxheart tomatoes
  • 3 yellow peaches
  • 1 sprig basil
  • 2 pinches salt
  • to taste extra virgin olive oil
  • to taste oregano (fresh or dried)

Preparation of Caprese Salad with Peaches

You can grill the Peaches for a few moments on each side if you want a different texture contrast.

  • Wash and dry the peaches and tomatoes, cut the peaches into not too thin slices or if you prefer, you can cut them into wedges.

  • Cut the tomatoes into thick rounds, season them with a pinch of salt and set aside.

  • Cut the mozzarella into slices and pat them dry with paper towels.

  • In a serving dish or a shallow dish, arrange in order, a slice of tomato, one of peach and one of mozzarella until all ingredients are used.

    Slightly overlap them so the dressing can penetrate all the ingredients.

  • Sprinkle with some leaves of fresh basil (chopped if large), fresh or dried oregano, and a generous drizzle of extra virgin olive oil.

  • If you wish, you can add more salt on top and also freshly ground black pepper.

    Let it rest in the refrigerator for at least 30 minutes before serving.

Storage, tips, and variations

You can store it in the refrigerator for a few hours.

If you want to add a crunchy note you can grill the peaches for a few moments on each side in a grill pan without adding fats.

Dress the Caprese with Peaches also with some lemon juice (or balsamic vinegar)

Use a quality buffalo mozzarella, preferably freshly made, and pat it well to prevent it from releasing its whey during preparation.

With some freshly ground black pepper, you’ll add an extra touch.
