Steps for preparing steamed cauliflower in the pressure cooker:
With a knife, remove the leaves surrounding the cauliflower, discard the less attractive ones, and set aside the others, cutting them in half if they are large.
Cut the stem off the cauliflower and use the knife to cut all the florets.
Since nothing goes to waste in the kitchen, you can use the stem for making a vegetable puree or broth.
Try to keep the florets uniform in size for even cooking.
Rinse the florets and leaves under running water and dry them well with a paper towel.
In the pressure cooker, add 1 cup of water, place the steaming basket inside, fill it with the cauliflower florets, close the pressure cooker, check that the valve is on the pot icon, turn the gas to medium-high flame, when you hear the whistle or see the leverblock rise, it means the cooker is under pressure, lower the flame and cook for 5 minutes.
After the time is up, turn off the gas, turn the valve to steam and let the steam escape, when the leverblock lowers, it means you can open the pressure cooker.
Check the cooking; if it’s not perfect yet, put the cooker back under pressure and cook for 1 more minute (follow the same procedure, bring the pot to steam, and when the valve rises, lower the gas and count the minute).
Remove the cauliflower from the pot, now you can prepare it in different ways:
– in a salad, seasoned with oil, vinegar, and salt
– sautéed in a pan with oil, garlic clove eaten either as a side dish or to dress pasta.
