The boneless fish patties without eggs are delicious fish patties with a light breading, baked in the oven.

The meat is very firm and contains no bones, and it’s sold in already skinned slices.
It is very common in the Mediterranean, especially in Sicily.
It’s light and tasty, and due to the absence of bones, it is also suitable for children.
The recipe for boneless fish patties is a customizable basic recipe: you can substitute the dogfish with another boneless filleted fish [cod, hake, plaice].
• I do not add eggs;
• I do not add milk;
• breading made with whole wheat breadcrumbs with a little grated cheese.
Remember to account for the breading in the total carbohydrate count of your meal.
Variations
You can add herbs and spices, vegetables, or greens to the basic ingredients.

Ingredients
- 14 oz dogfish (in slices)
- 1 pinch salt
- 1 pinch mixed peppercorns (with grinder)
- to taste parsley (chopped)
- to taste whole wheat breadcrumbs
- 1 tbsp Parmigiano Reggiano (grated)
- 1 drizzle extra virgin olive oil (raw)

Preparation
For this recipe, I used a single large slice of dogfish.
You can substitute the dogfish with another boneless filleted fish [cod, hake, plaice].Wash the slice or slices thoroughly under running water, let them drain in a colander, and blot the remaining water with kitchen paper towels.
They should be very dry.Whether fresh or thawed, take the dogfish slices out of the fridge at least half an hour before cooking.
Remove any skin, internal residues, bone, and cartilage and cut the slice or slices of dogfish into chunks.
In the mixer, add:
• the chunks of dogfish;
• a pinch of salt;
• a pinch of pepper;
• the parsley;
and chop.If you want spicier fish patties, add a handful of capers, olives, and sun-dried tomatoes to the mix.
In a plate, add:
• whole wheat breadcrumbs;
• grated cheese;
• salt;
• pepper;
and mix.Line a baking sheet with a sheet of parchment paper.
Using your hands, form small balls, dip them one at a time into the breading, flatten slightly, and place them on the baking sheet.
To make the patties as uniform as possible, I use a 1/4 oz or 1/2 oz scoop, depending on the size desired.
You can vary the shape and size according to taste: small or medium, round or flat.Briefly preheat the oven.
Bake at 356°F for 20 minutes in a fan oven, turning the patties halfway through.Plate up.
Add a drizzle of raw oil and grind the pepper.Your boneless fish patties without eggs are ready.
