Ingredients
- 1 2/3 cups all-purpose flour
- 3/4 cup sugar
- 3 eggs
- 1/2 cup whipping cream
- 2 tbsps potato starch
- 1/4 cup butter (softened)
- 1 packet baking powder
- 2 apples
- 3 tbsps unsweetened cocoa powder

Steps
Preheat the oven to 350 degrees Fahrenheit.
Grease and flour a ring cake pan. For convenience, I use a baking spray.
Peel the apples, remove the core, cut them into cubes, and place them in a bowl with water and freshly squeezed lemon.
In a large bowl, beat the eggs with sugar until light and fluffy.
Add the softened butter and cream, and mix.
Add the sifted flour, potato starch, baking powder, and unsweetened cocoa powder, and gently mix until you get a smooth and homogeneous batter.
At this point, add the apple chunks and gently blend.
Pour the batter into the pan, bake, and cook for about 40 minutes, until a skewer inserted into the center comes out clean.
Once baked, remove your ring cake from the oven and let it cool.
Turn it out onto a slate plate and decorate with chocolate topping.
Storage and Tips…
Store in the fridge covered with a cake dome
Consume within 2 days.
