Gluten-free Coffee Muffins Ingredients
- 2 eggs
- 4 oz sugar
- 1 1/2 cups rice flour
- 1/3 cup sunflower oil
- 1/4 cup milk (replace with another plant-based beverage)
- 1/4 cup coffee (unsweetened)
- 2/3 cup potato starch
- 2 tsp baking powder
- chocolate sprinkles
Gluten-free Coffee Muffins Steps
Once all the ingredients are weighed, melt the butter in the microwave and prepare the coffee.
Beat the eggs with the sugar using electric whisks until a light and fluffy mixture is obtained.
Add the unsweetened coffee, melted butter (not hot), and milk.
Gradually add the flours while continuing to whisk at low speed, then also add the baking powder.
It’s time to fill the molds. If you use silicone ones, you don’t need to grease and flour them. If you use aluminum ones, you need to do so.
With a small ladle or spoon, fill the molds and decorate with chocolate sprinkles.
Bake the coffee muffins in a preheated ventilated oven at 356°F for 20/25 minutes. Always adjust with your oven. Once cooked, let them cool.
The coffee muffins keep for several days under a glass dome. They can also be frozen once cooked; then, when needed, let them defrost and you can slightly warm them in the oven before eating.
