Ingredients

  • 10 oz cherries
  • 2 1/2 cups whole wheat flour
  • 3/4 cup whole cane sugar
  • 3/4 cup yogurt
  • 1/3 cup extra virgin olive oil
  • 1 lemon zest
  • 2 eggs
  • 1/4 cup chopped almonds
  • 2 tsp baking powder
  • to taste cherries for decoration
  • 1 cup powdered sugar
  • 3 1/2 oz cherries (1 1/2 tbsp needed)

Preparation

Wash the cherries, dry them and remove the pits. With a sharp knife or using a cutter, chop the almonds coarsely so they can be felt under the teeth.

In a large bowl, pour the sugar, eggs, and beat for a few seconds, then add the extra virgin olive oil.

Add the yogurt and mix it into the mixture. Finally, add in the whole wheat flour, baking powder, and mix.

At this point, all that’s left is to add the pitted cherries, chopped almonds, grated lemon zest, and mix well to make our dough homogeneous.

Grease and flour a 6-7 inch diameter mold, pour all the mixture inside and level it.

Bake in a preheated oven, static mode, at 350°F, and cook for about 40/50 minutes.

Meanwhile, prepare the glaze with the remaining pitted cherries. Blend them finely and add them to the powdered sugar one tablespoon at a time. Mix well, whipping everything with a hand or electric whisk.

Remove the cake from the mold as soon as it has cooled slightly, and let it cool on a cooling rack.

Pour the glaze over it and decorate with more cherries.

Tips and Storage

The cherry cake keeps well for a few days, but inside a glass or ceramic container with an airtight seal. The bread bag could also work.
