Today for breakfast I made the soft yogurt ring cake. It’s really soft like a cloud and I almost always get seconds. Dipped in coffee, it’s delicious. My daughter Chiara also takes it to school for a snack. I flavored it with lemon zest, but you can easily replace it with orange zest or even vanilla. It’s always good.

Ingredients
- 2/3 cup vegetable oil
- 3/4 cup sugar
- 3 eggs
- 1 3/4 cups flour
- 1 packet baking powder
- zest of 1 lemon
- 3/4 cup plain yogurt

- 1 Ring Cake Pan

Steps
In the Bimby bowl, powder the sugar with lemon zest for 10 seconds at turbo speed.
Add the rest of the ingredients and mix for 2 minutes at speed 5.
Transfer the mixture to a greased and floured cake pan and bake for 40 minutes at 356°F.
