  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 fresh clementines (zest and juice)
  • 1 egg
  • 1/4 cup sunflower oil
  • 1 1/4 cups milk

  • 2 teaspoons baking powder

Clementine Pancakes Recipe

  • Start preparing the clementine pancakes by cracking a medium-sized egg in a bowl.
    Add the sunflower oil and the zest and juice of two untreated clementines.

  • Also add the milk to the bowl – if you’re lactose intolerant, you can easily use a plant-based drink in equal measure – and mix all the ingredients with the whisks.

  • Add the sugar to the bowl with the liquid ingredients.
    With the help of a sieve, add the all-purpose flour and the baking powder.
    Mix with the whisks until you get a smooth batter not too thick.

  • Finish the preparation with the poppy seeds.
    Mix again until they are well distributed in the batter.

  • Heat a flat-bottomed pan with a little sunflower oil (or butter).
    Add a couple of tablespoons of batter (I used an ice cream scoop) and cook over low heat until bubbles form on the surface.

  • Flip the pancakes with a spatula and cook for another two minutes.
    Continue in the same way until all the batter is used.
    Serve the clementine pancakes immediately and serve them with honey or maple syrup.
