Greek Yogurt Cake

The Greek Yogurt Cake is a simple and quick recipe. I used vanilla-flavored Greek yogurt, syrupy cherries, and sprinkled the surface with hazelnut crumbs. The result was wonderful and so delicious, as my son and especially my husband greatly appreciated the cake 😜. A soft dessert perfect for the whole family’s breakfast, to add to the collection of breakfast desserts.

Ingredients for the Greek Yogurt Cake

  • 2 eggs
  • 5.3 oz sugar
  • 3/4 cups 0% fat Greek yogurt (vanilla)
  • 3.4 oz corn oil
  • 1 tbsps baking powder
  • 1.4 cups all-purpose flour
  • 3.5 oz syrupy cherries
  • to taste hazelnut crumbs

Tools

  • 1 Bowl
  • Electric whisk
  • Pan

Steps

  • In a bowl, I use an electric whisk to beat the eggs, sugar, yogurt, and corn oil, making the mixture light and homogeneous.

    I gradually add the flour and baking powder sifted together and mix well. I add half of the cherries cut into pieces, mix well, and pour the batter into the previously oiled and floured 8-inch pan.

    I decorate the cake’s surface with the remaining cherries and sprinkle it with a handful of hazelnut crumbs, bake at 356°F for about 35 minutes.

    With the toothpick test, I ensure the cake is cooked, so I take it out, let it cool, and taste it 😜

Storage

Store the cake under a cake dome to avoid direct contact with air, keeping it soft and fragrant.
