Ingredients
- 1 cauliflower
- 1 cup yellow cherry tomatoes
- 1 cup cherry tomatoes
- 1/3 cup black olives
- 1/2 cup Parmesan (shaved)
- to taste extra virgin olive oil
- to taste salt

Steps
Cut the cauliflower into florets and wash them thoroughly under running water,
Bring a pot of lightly salted water to a boil. Add the cauliflower florets and cook for about 5-7 minutes until tender but not too soft. Drain and set them aside
Wash the yellow and cherry tomatoes and cut them into halves or quarters.
Pit the black olives and slice them into rings.
In a large bowl, place the boiled cauliflower florets, tomatoes, and black olives. Dress with a drizzle of extra virgin olive oil, salt, and shaved Parmesan, mixing gently to distribute the seasoning evenly.
Transfer everything into the air fryer and cook for about 15-20 minutes until evenly golden.
