Mediterranean Cauliflower in Air Fryer

Ingredients

  • 1 cauliflower
  • 1 cup yellow cherry tomatoes
  • 1 cup cherry tomatoes
  • 1/3 cup black olives
  • 1/2 cup Parmesan (shaved)
  • to taste extra virgin olive oil
  • to taste salt

Steps

  • Cut the cauliflower into florets and wash them thoroughly under running water,

    Bring a pot of lightly salted water to a boil. Add the cauliflower florets and cook for about 5-7 minutes until tender but not too soft. Drain and set them aside

  • Wash the yellow and cherry tomatoes and cut them into halves or quarters.

    Pit the black olives and slice them into rings.

  • In a large bowl, place the boiled cauliflower florets, tomatoes, and black olives. Dress with a drizzle of extra virgin olive oil, salt, and shaved Parmesan, mixing gently to distribute the seasoning evenly.

  • Transfer everything into the air fryer and cook for about 15-20 minutes until evenly golden.
