  • 2.1 oz ricotta (including goat's)
  • 1.4 oz jam (of choice)
  • as needed powdered sugar

Steps for Pavesini Cookies with Jam and Ricotta

  • Easier done than said, these cookies are super-fast, you can use ricotta, cream cheese, or even mascarpone.

  • Work the ricotta in a small bowl with a fork to make it creamy, then arrange the 18 Pavesini on a serving plate.

  • On half of them, spread the ricotta using a teaspoon, on the remaining ones, spread the jam.

  • Join the Pavesini, one half with ricotta and the other with jam, pressing them slightly, and sprinkle with powdered sugar.

  • The Cookies with Ricotta and Jam are ready!!

Tips, Variations, and Storage

You can use whichever jam or preserves you prefer.

Choose a dry ricotta a few days old; goat’s ricotta is perfect as it is slightly sweet.

You can replace the ricotta with robiola, cream cheese, or even mascarpone for a richer version.
