Low Glycemic Index Eggless Ricotta Gnocchi

Thursday gnocchi.” as a popular Roman saying goes.
but any day of the week is perfect for enjoying them!

I bypassed the potato obstacle by preparing low glycemic index eggless ricotta gnocchi.

Basic ingredients:
• Ricotta [1-2 days old, well-drained];
low glycemic index mix [Molino Spadoni] based on Type 1 flour and resistant starch, rich in fiber and protein.
If you don’t have the low glycemic index mix, you can use other low glycemic index semolina or flour: which wholemeal semolina and flours I use in my doughs.

Once the low glycemic index eggless ricotta gnocchi dough is ready, we can shape our gnocchi into any form to make them suitable for any holiday or occasion: Carnival [confetti, flowers, stars] and Valentine’s Day [hearts], for example.

Since the protein and lipid component of the meal is included along with the carbohydrates in the same gnocchi, they are in themselves a one-dish meal that concentrates the characteristics of a balanced meal in a single course and therefore it will be sufficient to dress them with a simple sauce.

Furthermore, since it is fresh pasta, the fiber content is low, so it is advisable to consume them after an abundant portion of vegetables.

Ingredients

  • 7 oz ricotta (1-2 days old, well-drained)
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • 2 tbsps cheese (grated)
  • 1 pinch nutmeg (or cinnamon)
  • 3.5 oz low glycemic index flour (Molino Spadoni)
  • as needed low glycemic index flour

Tools

  • 1 Pastry board or cutting board
  • 1 Rolling pin
  • 1 Gnocchi board
  • 1 Tray or food container

Preparation

You can color and flavor your gnocchi by adding to the ricotta any aromas [example: basil, marjoram, oregano, rosemary, parsley, sage] and spices [example: turmeric or saffron].

What can I substitute for the low glycemic index mix?
If you don’t have the low glycemic index mix, you can use semolina, wholemeal semolina, or another low glycemic index wholemeal flour: which wholemeal semolina and flours I use in my doughs.

  • Put the well-drained ricotta in a bowl, season with:
    • a pinch of salt;
    • a pinch of pepper;
    • two tablespoons of grated cheese [cacio cavallo ragusano, grana padano, or parmesan];
    • nutmeg [alternative cinnamon];
    and mix with a fork.

  • Add:
    • the low glycemic index flour;
    work first with a fork then with your hands until you get a soft and moist but not wet dough.
    If necessary, add more low glycemic index flour.

    Transfer the dough to a lightly floured work surface or cutting board and continue to knead until you get a firm and elastic dough.

  • Once the low glycemic index eggless ricotta gnocchi dough is ready, we can shape our gnocchi into any form to make them suitable for any holiday or occasion: Carnival [confetti, flowers, stars] and Valentine’s Day [hearts], for example.

  • Traditional gnocchi or gnocchetti
    Roll out the dough with the rolling pin to a thickness of 0.39-0.59 inches, cutting strips 0.79-1.18 inches wide [according to the size you desire].
    Cut the strips into rectangles.
    Use the special gnocchi board or a fork to make gnocchi or gnocchetti.
    Alternatively, simply cut into pieces.

  • Various shaped gnocchi or gnocchetti
    Roll out the dough with the rolling pin to a thickness of 0.39-0.59 inches.
    Use any cookie cutter you like [confetti, flowers, stars, hearts] to make gnocchi or gnocchetti.

    Rework the leftover dough, roll out and cut more shapes.

  • Make sure to lightly flour them before stacking to prevent sticking together.
    Line a tray with a sheet of baking paper on which to place the gnocchi and sprinkle a little flour on top.

    Place them in the fridge to dry while waiting to cook.

    Your Low Glycemic Index Eggless Ricotta Gnocchi are ready.

    Remove them as soon as they rise to the surface using a slotted spoon, transfer them to a colander and rinse before dressing.
