It’s a fairly simple preparation that won’t take you much time but will result in a very original dish, a savory variant of the classic sweet strudel, but above all, it will conquer everyone with the crispness of the outer pastry and the creaminess of the filling.
It is a dish born by chance, to use up a nice slice of cooked ham… too little to divide between two people.

Savory Cauliflower Strudel
- 1 1/3 lbs cauliflower (cleaned weight)
- 3.5 oz cooked ham (1 thick slice)
- 150 emmentaler (or Galbanino or fontina etc.)
- 1 egg
- 3 tablespoons ricotta
- 1.75 oz parmesan
- 1 puff pastry (rectangular)
- salt
- pepper
- 1 tablespoon milk
- 1 egg yolk

Steps
Savory Cauliflower Strudel
To start the preparation of the savory strudel with cauliflower, start with the cauliflower.
Wash the cauliflower florets and boil them well in salted water.
Drain them.
Remove the rind from the fresh cheese and cut it into cubes.
Also, cut the cooked ham into cubes.
Grate the cheese.
Mix the now cold cauliflower with the ham, cubed cheese, ricotta, one egg, and grated cheese in a bowl.
Add salt, but not too much, and a grind of pepper.
Mix.
(It is a recovery recipe, meaning I used emmental that I had in the fridge, but you can use the cheese you like best. Anyway, I will tell you that cooked ham and emmental go together very, very well).
Roll out the puff pastry into a rectangle of approximately 14×10 inches and place it on a sheet of baking paper.
Place the prepared filling on one half of the rectangle.
Fold the puff pastry over the filling and seal the edges well.
Place the strudel on the baking tray lined with baking paper, with the seam side down, then score the strudel on the surface with a sharp knife and brush it with egg yolk diluted with a teaspoon of milk.
Bake the strudel in a preheated ventilated oven at 428°F for 10-15 minutes, then lower the temperature to 356°F, switch to static mode, and continue baking for another 15-20 minutes.
Air fryer cooking: cook at 374°F for 15/18 minutes, until the strudel is well browned.
I want to remind you that both the oven have different cookings, so always check.
When the strudel is well browned, take it out of the oven and let it cool.

Tips
The savory strudel keeps for about two days when placed in a closed container or covered with kitchen plastic wrap.
If you are not vegetarian and want a less rich version, you can add sun-dried tomatoes or walnuts or olives.
