  • First, wash the potatoes thoroughly and cut them into thin slices (about 0.04-0.08 inch thick) with a mandoline, a vegetable slicer, or a sharp knife. Place them in a bowl with cold water for about 30 minutes: this step helps to release excess starch and make the chips crispier.

  • Drain the potatoes and dry them very well with a clean towel or paper towels. Transfer the potato slices to a bowl, add the oil, salt, pepper, and rosemary needles (or chosen spices). Mix well to ensure that all the potatoes are evenly seasoned.

  • Arrange the potato slices on a baking sheet lined with parchment paper, making sure they do not overlap.

  • Bake in a preheated oven at 392°F for about 15-20 minutes (for the last 3-4 minutes switch to grill mode), or until the chips are golden and crispy. Turn them halfway through cooking for even cooking. Remove from the oven and let them cool slightly before serving.
