Ingredients

  • 4 apples (medium size)
  • 2 2/3 cups all-purpose flour
  • 3/4 cups sugar
  • 1/2 cups vegetable oil
  • 3/8 cups milk (or plant-based drink)
  • 4 eggs (medium)
  • 1 1/4 cups walnuts (already shelled)
  • lemon zest
  • lemon juice
  • 1 packet baking powder
  • 1 tablespoon brown sugar (to taste)
  • 1 pinch ground cinnamon (to taste)

Preparation

  • Peel the apples and core them. Slice two apples into slices, and the remaining two into smaller pieces. Put them in a bowl and sprinkle with lemon juice to prevent browning.

  • Chop 100 g of walnuts finely, and chop the remaining 40 g more coarsely.

    Now proceed to make the cake batter: beat the eggs (whole) with the sugar and the grated lemon zest until they are fluffy and light.

  • Pour in the vegetable oil and the milk, continue mixing with the mixer.

    Then add the sifted flour and baking powder, in several additions, and mix well.

    Now add the apples cut into small pieces and the chopped walnuts. Mix well without deflating the mixture.

  • Line the baking pan with parchment paper, or grease and flour it. Pour the batter and level it.

    Add the apple slices on the surface, slightly inserting them, and the walnut pieces.

    Finally, sprinkle to taste with brown sugar mixed with cinnamon.

  • Place the cake in a static oven at 350°F and bake for about 50 minutes. Adjust time and temperature based on your oven and the type of mold used, and always do the toothpick test before removing from the oven.

  • The apple and walnut cake is ready, let it cool well before cutting. If you used brown sugar, no need to add powdered sugar.

Tips and Variations

If you are lactose intolerant, you can replace the milk with a plant-based drink.

Cinnamon pairs wonderfully with apples and walnuts, but if you don’t like it, you can omit it.

You can use different apple varieties, depending on the season.

If you do not consume the dessert in one day, store it in a cool place or in the refrigerator.
