Ingredients for Stuffed Peppers
- 1.75 lbs peppers
- 1 cup bread crumbs (from bread)
- 1 clove garlic
- 1 bunch parsley
- to taste salt
- 2 tablespoons capers
- 4 fillets anchovies
- to taste extra virgin olive oil
How to Make Stuffed Pepper Rolls
First, you need to roast the peppers. Wash the peppers. Brush them with some oil and grill them in an air fryer at 375°F for 15-16 minutes or on a hot grill or in the oven. With the air fryer, you don’t even need to turn them to cook them all over.
When they are well charred all over, transfer the peppers to a paper or plastic food bag. Let them cool; this way, it will be easy to peel them. Peel them and also remove the internal seedsCut each pepper in half first, and then each half into 3 parts to get wide strips to fill. Prepare the filling: crumble the bread crumbs in a bowl. Add the capers and anchovy fillets in small pieces. Add the chopped parsley, grated parmesan, and a minced garlic clove. Mix.
Lay the pepper strips on the work surface and lightly salt them. Add a tablespoon of filling on one side and roll it up to form a pepper roll. Prepare them all in the same way.
Arrange the Stuffed Pepper Rolls side by side in an oiled baking dish. Add a drizzle of extra virgin olive oil and a sprinkle of grated parmesan on top. Cook the Pepper Rolls in a preheated static oven at 375°F for 16-18 minutes
