Ingredients

  • 3 eggs
  • 1 1/4 cups sugar
  • 2/3 cup sunflower seed oil
  • 2/3 cup milk
  • 1 lemon juice
  • 2 cups all-purpose flour
  • 1 packet baking powder

Tools

  • 1 Bundt pan

How to prepare the soft lemon bundt cake

  • In a bowl, place the eggs and sugar. Mix with the electric mixer until the mixture is fluffy and frothy.

  • Add the oil, lemon juice, and milk. Mix with the electric mixer.

  • Finally, add the flour and baking powder. Mix everything well with the electric mixer, being careful not to create lumps.

  • (Regarding the baking powder, I used a measure of Ruggeri’s Migliora dolci. It makes the cakes very soft. If you want to take a look, you can find it here. If you don’t have it, you can use a packet of baking powder.)

  • Pour the obtained mixture into a previously greased and floured 9.5-inch bundt pan. My pan does not need to be greased or floured. If you want to take a look, you can find it here.

  • Bake in a preheated static oven at 350°F and let cook for about 30/35 minutes. Be sure to check the cooking times based on your oven.

  • Remove from the oven, let it cool slightly and if you like, dust with powdered sugar.
