Tasty Quick Potatoes

I’ll give you a brief explanation of why I called this recipe “tasty quick potatoes.” Tasty potatoes because they are delicious; the classic dish that sees everyone chasing after the last crumb. Quick for the simplicity of their preparation. The times, however, are a bit long because they include boiling the potatoes and then baking them in the oven. Anyway, the result is really thumbs up. So trust me and try them as soon as possible.

Ingredients for Tasty Potatoes

  • 1.76 lbs potatoes (weighed with skin)
  • 2.12 oz scamorza cheese
  • Grana Padano cheese grated (or Parmesan)
  • garlic powder
  • paprika
  • 1 bunch parsley
  • 3.4 tbsp extra virgin olive oil (+ some for the baking dish)
  • salt

  • 1 Meat Tenderizer or a glass
  • 1 Baking Dish

Preparation of Tasty Potatoes

  • Wash the potatoes very well without peeling them, scrubbing them thoroughly with a brush. Then boil them starting from cold salted water. It will take 35/40 minutes depending on the size of your potatoes, which will be ready when you can easily pierce them with a fork. If they are not all the same size (like mine, for example), keep an eye on them and take the smaller ones out of the pot as they are cooked.

  • Meanwhile, prepare an emulsion by putting the oil, some garlic powder, paprika, chopped parsley, and salt in a small bowl. You can dose these ingredients as you like according to your personal taste. You can also choose between sweet or smoked paprika, always depending on your preferences.

  • When all the potatoes are cooked, crush them with a meat tenderizer or a glass without removing the skin. 

  • Then, with the help of a spatula, transfer them into a previously greased baking dish. Spread them evenly over the surface but without further crushing them. 

  • At this point, pour the prepared emulsion over the potatoes. 

  • Finally, insert diced scamorza cheese here and there, and sprinkle the entire surface with grated cheese: I used about 0.53 oz.

  • Bake the tasty quick potatoes in a preheated static oven at 356°F for 10 minutes + 5 minutes on grill mode. Take them out of the oven and serve them directly from the baking dish. Enjoy! Paola
