Roasted Eggplants

Roasted eggplants in the air fryer! A real revolution in the kitchen, it cooks and you do other things. The eggplant is the fruit of an annual plant that is harvested in the summer months. Its origins are Indian and probably also Chinese. They can be found in white, dark purple, striped, and violet, they can be long or round but this does not change the taste. Like peppers, eggplants are rich in minerals and vitamins C and A, friends of women, thanks to the few calories they contain. Previously, to prepare roasted eggplants, I would turn on the barbecue, but I discovered that with the air fryer it is really quick, indeed twenty minutes to be exact and the taste is just as good.

Ingredients

  • 10 eggplants (small)
  • 7 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1 bunch parsley
  • 1 clove garlic
  • 1 tbsp salted capers

  • Air fryer

Preparation

  • This variety of small eggplants I can only find in Sicily.

  • Whole like this, I put the small eggplants in the air fryer at maximum power, 482°F for 20 minutes. (in two rounds, first 5 eggplants and then the other 5)

  • I wait a few minutes and as soon as they are cold I peel them off.

  • I cut the eggplants into strips

  • I season the eggplants with garlic, salt, parsley, and extra virgin olive oil.

    Here is a ready side dish that is easy and simple, roasted eggplants.
