- 1/2 cup Pecorino Romano cheese (grated)
- 1/2 tsp fine salt
- 1 clove garlic
- 2 tsp extra virgin olive oil

Steps
Clean the broccoli rabe by removing the tough stems and the ugliest leaves, wash them well under running water, drain them, and cook them in a pressure cooker in cold water. From the whistle, count 4 minutes. Turn off, release the steam, and open the lid. Collect the broccoli rabe, drain them, place them on the cutting board, and chop them with the mezzaluna.
In a bowl, crack the eggs and mix them with the cheeses and chopped garlic. Add the broccoli rabe, the salt, and mix again. Pour the oil into the pan, and once hot, pour the mixture. Keep on moderate heat until the edges start to set, then turn off and leave with the lid on for 5 minutes (the heat will continue to set it). Turn the heat back on, and after a few seconds, flip the omelet using the lid. Cook for another 5 minutes and turn off; the omelet with broccoli rabe is ready.
