Today, a recipe for a delicious and tasty side dish: pumpkin cubes with aromatic herbs in the air fryer.

In autumn, pumpkin reigns on our tables, its dark yellow or orange color warms us just by looking at it because, as we know, we eat with our eyes first! When I was little, my mother always served me the same pumpkin recipe, the maximum variation was risotto or pasta. Luckily, I discovered many ways to use it for both sweet and savory dishes. Its versatility makes it delicious in any dish: from ravioli fillings to risottos, from fried preparations to baked ones, not to mention cereal soups, creamy soups and pumpkin gnocchi. Today I propose an easy and quick side dish to make, which everyone will surely appreciate, classic baked pumpkin but cooked in the air fryer. We liked it a lot, and my son went crazy when he tasted it; he’s a real gourmet!

I used a Delica pumpkin, which is one of my favorites for its sweetness and also because, with this variety, you can eat the skin after cooking. If we can waste as little as possible in the kitchen, I’m happy. My motto now is #zerowaste #behappy! I bought a Delica pumpkin, and only the stem and the strings ended up in the bin because, besides eating the baked skin, I made fantastic snacks to munch on with the seeds!

  • 17.6 oz pumpkin (cleaned)
  • 3 tbsp olive oil
  • to taste fine salt
  • 4 leaves sage
  • 2 sprigs rosemary

Let’s Start!

  • Preparing pumpkin cubes with aromatic herbs in the air fryer is very simple. Clean the pumpkin, remove the skin and inner strings; if you use a pumpkin with edible skin, you can leave it. Cut slices about 1.2 inches thick and from these derive cubes about 0.8 inches.

  • Wash the sage leaves and rosemary needles, place them on a cutting board, and chop them. Then put the pumpkin cubes in a bowl and season with olive oil, salt, and chopped herbs. Mix with a spoon to flavor. Put some parchment paper in the air fryer and pour the seasoned pumpkin cubes.
