Puff pastry roll with mortadella and scamorza, a tasty appetizer, very easy to prepare, perfect for a buffet, an aperitif, but also for a snack.
You can prepare the roll by replacing the mortadella with other cold cuts and the scamorza with another cheese. You can choose the combination you like best. For example, Here I prepared it with cooked ham and mozzarella. But it is also excellent with the addition of cherry tomatoes, as in this recipe.
You can serve the puff pastry roll cut into slices as an appetizer, but also as a second course for an informal family dinner. Needless to say, it disappears quickly!

- 1 roll puff pastry (rectangular or round)
- 3.5 oz mortadella
- 7 oz scamorza
- to taste milk
- to taste sesame seeds

Steps
First, unroll the puff pastry and lay it out on a work surface with its parchment paper. Let it sit for a few minutes at room temperature. Prick the surface with the tines of a fork.
Meanwhile, preheat the oven to 350°F (180°C), fan.
Cover the surface with mortadella, leaving about 0.5 – 0.75 inches (1.5 – 2 cm) from the edge, and then finish with scamorza slices (or other cheese if you prefer, such as mozzarella, fontina, ..). At this point, you can also add grated Parmesan cheese.
Roll the puff pastry, compressing slightly, then brush the surface of the roll with milk using a kitchen brush, and finish with sesame seeds (if you like). For aesthetics, I trimmed the 2 ends of the roll, but you can simply seal them by pressing with your fingers and then cutting them once baked.
Bake in a preheated oven for about 25 – 30 minutes. Keep an eye on the baking, since every oven is different. It should be nicely golden. Once cooked, let it cool slightly, slice it, and serve. Here is the Puff Pastry Roll with Mortadella and Scamorza ready. Enjoy your meal!

Storage
The Puff Pastry Roll with Mortadella and Scamorza is best enjoyed freshly made, but if there’s any left over, it can be stored and reheated.
If you plan to eat the roll within a few hours of baking, you can keep it at room temperature in an airtight container. It will reach its optimal consistency within a couple of hours. After that, the pastry might start to soften.
For longer storage (up to 3 days), store the roll in the refrigerator in an airtight container. This will help maintain its quality better than keeping it at room temperature.
How to Reheat
In the oven: the best way is in a preheated oven at 350°F (175°C) for about 5-10 minutes. This will help to make the pastry crispy again.
In the air fryer: Reheat at about 350°F (175°C) for 3-5 minutes. Check occasionally to avoid burning.
In the microwave: I do not recommend using the microwave. The pastry will likely become soft and less crispy. If you must use the microwave, heat in short intervals to avoid overheating.
Note: reheating puff pastry will never bring it back to its original, perfectly crispy state. It will still be delicious but will definitely be slightly softer than when freshly baked.
How to Freeze the Roll (Uncooked)
You can also freeze the raw roll for longer storage. Proceed as follows.
Prepare the roll and place it on a baking tray covered with parchment paper and freeze until solid (about 1-2 hours). It can be stored in the freezer for up to 3 months.
Baking: when ready to bake, preheat the oven as usual. Place the frozen roll on a baking tray covered with parchment paper and bake for 30-35 minutes, or until golden. It may be necessary to add a few extra minutes to the baking time.
Tips and Suggestions
– Before putting it in the oven, you can cut the roll into slices about 0.75 inches (2 cm) thick using a sharp knife. Then bake them in a preheated oven for 15-20 minutes.
– Cheese: fill the roll with your preferred cheese. Provolone, fontina, mozzarella, ricotta, or even a mix of cheeses. For extra flavor, also add some grated Parmesan cheese.
– You can also prepare the puff pastry roll in a vegetarian version by simply replacing the mortadella with grilled vegetables (zucchini, peppers, eggplant, …), but also mushrooms.
– Prepare the roll in advance: you can assemble the roll the day before, for example, and store it in the refrigerator (uncooked) for up to 24 hours.
– How to serve it: this roll is excellent served as an appetizer, a snack, or an addition to a charcuterie board.
