Puff Pastry Ring Cake with Ricotta and Pears

Ingredients

  • 1 sheet puff pastry (rectangular)
  • 2 pears
  • 1 tbsp brown sugar
  • 1 oz butter
  • 1 cup ricotta
  • 2 tbsps sugar
  • to taste chopped pistachios
  • 1 egg

Steps

  • Peel the pears and dice them.

    In a pan, melt the butter and add the pear cubes.

    Add the brown sugar and cook over medium heat until they become soft. Once cooked, let them cool.

  • In a bowl, mix the ricotta with the sugar until you get a smooth and homogeneous mixture.

  • Preheat the oven to 350°F (180°C) and line a baking tray with parchment paper.

  • Unroll the puff pastry and make cuts on one of the long sides to create “fringes.” (see photo)

  • Spread the ricotta along the opposite side, add the pears, and sprinkle with chopped pistachios.

  • Using the parchment paper, roll the pastry towards the fringes.

    Join the ends to form the classic ring shape. For a more scenic effect, you can twist the fringes onto themselves.

  • Brush with beaten egg and bake for about 30 minutes until golden brown.
